Pineapple Cookies


These decadent, bite sized yummy treats are delicious and my family has been making them for almost 8 years and people can't seem to get enough of these little cookies which we home made in overwhelming quantities to give to family and friends for Chinese New Year.

They are very buttery and since we're too lazy to do the jam, we just purchased a huge pack of pineapple jam, which we manually roll into little tiny pupa like shapes.

Here's the easy recipe for the batter:

INGREDIENTS:

300 gm Flour
250 gm Butter
50 gm Icing Sugar
1 Egg Yolk

INSTRUCTIONS:

1) Mix butter, flour and icing sugar.
2) Add in the egg yolk.
3) Keep it in the freezer for a couple of minutes to keep it firm and pliable.

Isn't it simple? Trust me, it's simply delicioso!
